Chicken Adobo (Adobong Manok)
Chicken Adobo is just one variation of Adobo recipes. This is a traditional family recipe which has been handed down from my mother. This dish is quite dry and spicy compared to other Adobo recipes which makes an excellent combination with steamed rice.
Chicken Adobo Ingredients:
1/2 kilo chicken (any parts)
3 cloves garlic chopped
1/2 cup soy sauce
4 tbsp vinegar
salt and pepper to taste
3 bay leaves (laurel)
vegetable oil
2 chili peppers chopped (optional)
Chicken Adobo Cooking Instructions:
Marinate chicken in soy sauce, garlic, vinegar and pepper at least one hour or until flavor soaks in chicken meat.
Place the marinated chicken in a pot. Add a small amount of water. Season with garlic, soy sauce, vinegar, bay leaves, and pepper. Bring to boil until chicken is tender.
When chicken meat is tender and sauce has soaked in add cooking oil. Mix well until blended and oil has thickened and blended well with chicken.Turn off heat.
Serve with hot steamed rice fish sauce dipping sauce.
Note: If you want dryer chicken adobo, you can simmer it for a longer period of time until the sauce is absorbed by chicken. Adjust the taste by adding seasoning according to taste. If you want spicier adobo, you can add more chopped chili pepper while simmering.
